Why you’ll love it
- Bananas with heavy brown spots mash smooth and sweeten the loaf.
- Baking soda is the lift. There is no baking powder in this batter.
- The center is done near 200°F, when a toothpick comes out clean.
- The loaf needs to cool before slicing or the crumb tears and looks underdone.
Ingredients
Ingredient amounts scale. Oven temperature and cook time do not. Salt, spices, and leaveners are a starting point after you scale. Taste and adjust.

Instructions
- 1
Heat the oven to 350°F. Grease a 9-by-5-inch loaf pan.
- 2
Mash the bananas in a bowl until mostly smooth.
- 3
Stir in the melted butter, sugar, egg, and vanilla.
- 4
Sprinkle the baking soda and salt over the bowl and stir. Fold in the flour just until it disappears. Do not eat the raw batter.
- 5
Fold in the chocolate chips. Spread the batter in the pan.
- 6
Bake 50 to 58 minutes. Tent with foil if the top gets dark.
- 7
The loaf is done when a toothpick in the center comes out clean and an instant-read thermometer in the center reads about 200°F.
- 8
Cool in the pan 15 minutes, then turn out and cool before slicing into 10 pieces.
Pro tips
- Pale yellow bananas will not mash well and the bread will be bland.
- A wet streak on the toothpick means more time, even if the top looks finished.
- Toss the chocolate chips with a teaspoon of the flour if they all sink in your pan.
Easy substitutions
- chocolate chips
- chopped walnuts
- unsalted butter
- 1/3 cup neutral oil
- granulated sugar
- packed brown sugar
Storage and reheating
Storage
Keep covered at room temperature up to 3 days, or refrigerate up to 5 days. Freeze slices up to 2 months.
Reheating
Warm a slice in a 300°F oven for 6 minutes, or toast it lightly. Microwave 12 seconds if you want it soft.

Kitchen tools we love
Practical tools these recipes actually use. This is not a review roundup, and these are not paid placements. If affiliate links are added later, they will be labeled and disclosed.
A heavy 12-inch skillet
Most of the chicken and steak recipes are written for one pan that holds heat. Stainless or cast iron both work.
An air fryer with a real basket
The air-fryer recipes expect a single layer. A crowded basket steams instead of browning.
A half-sheet pan
Drumsticks, potatoes, sausage, and carrots all use one. A dark pan browns faster than a very shiny one.
A sharp chef’s knife
These recipes do not need a specialty blade. A sharp 8-inch knife is faster and safer than a dull one.
A large cutting board
Big enough that the onion and the raw chicken are not sharing the same puddle.
Dry cups and a liquid cup
Desserts in particular expect level dry measures and a separate cup for milk.
An instant-read thermometer
Use it for poultry, pork chops, and meatloaf. Color is a weak guide.
