Why you’ll love it
- The crust needs a short bake so it is not sandy.
- Chocolate melts under the marshmallow. You do not have to stir a ganache.
- The broiler or the last hot minutes do the toasting.
- Cool them or the marshmallow will string forever.
Ingredients
Ingredient amounts scale. Oven temperature and cook time do not. Salt, spices, and leaveners are a starting point after you scale. Taste and adjust.

Instructions
- 1
Heat the oven to 350°F. Line an 8-inch or 9-inch square pan with parchment.
- 2
Stir the crumbs, sugar, and melted butter. Press firmly into the pan. Bake 8 minutes.
- 3
Sprinkle the chocolate chips over the hot crust. Let them sit 2 minutes, then spread into an even layer.
- 4
Cover with the marshmallows.
- 5
Bake 8 to 12 minutes, until the marshmallows are puffed and golden. If they are still pale, broil 30 to 60 seconds and stand there the whole time.
- 6
Cool completely before cutting.
Pro tips
- Do not walk away during the broil.
- A knife dipped in water cuts cleaner squares.
- If the crust crumbles, press the next one harder before baking.
Easy substitutions
- chocolate chips
- milk chocolate bars, broken up
- mini marshmallows
- large marshmallows, snipped in half
Storage and reheating
Storage
Keep covered at room temperature up to 3 days.
Reheating
Not recommended. Heat melts the marshmallow into a puddle.

Kitchen tools we love
Practical tools these recipes actually use. This is not a review roundup, and these are not paid placements. If affiliate links are added later, they will be labeled and disclosed.
A heavy 12-inch skillet
Most of the chicken and steak recipes are written for one pan that holds heat. Stainless or cast iron both work.
An air fryer with a real basket
The air-fryer recipes expect a single layer. A crowded basket steams instead of browning.
A half-sheet pan
Drumsticks, potatoes, sausage, and carrots all use one. A dark pan browns faster than a very shiny one.
A sharp chef’s knife
These recipes do not need a specialty blade. A sharp 8-inch knife is faster and safer than a dull one.
A large cutting board
Big enough that the onion and the raw chicken are not sharing the same puddle.
Dry cups and a liquid cup
Desserts in particular expect level dry measures and a separate cup for milk.
An instant-read thermometer
Use it for poultry, pork chops, and meatloaf. Color is a weak guide.
