No-Bake Chocolate Cheesecake
A cookie crust and a chocolate cream-cheese filling set in the fridge. There is no water bath and no oven. You do have to wait for it to chill, or it will not slice.

Why you’ll love it
- No oven.
- Chocolate is melted into the filling, not only sprinkled on top.
- The crust is cookies and butter.
- An overnight chill is what makes a clean slice.
Ingredients
Ingredient amounts scale. Oven temperature and cook time do not. Salt, spices, and leaveners are a starting point after you scale. Taste and adjust.

Instructions
- 1
Crush the cookies to fine crumbs. Stir in the melted butter. Press the mixture into the bottom of a 9-inch springform pan. Chill it while you make the filling.
- 2
Melt the chocolate and let it cool until it is warm, not hot.
- 3
Beat the cream cheese, sugar, and vanilla until smooth. Beat in the cooled chocolate.
- 4
In a separate bowl, whip the cream to soft peaks. Fold it into the chocolate mixture.
- 5
Spread the filling over the crust. Cover and refrigerate at least 6 hours, or overnight, until a knife comes out clean and the center does not jiggle.
- 6
Slice with a warm knife.
Pro tips
- Hot chocolate will seize the cream cheese into lumps. Let it cool until you can touch the bowl.
- Soft peaks mean the cream holds a bend, not a stiff dry peak. Stiff cream makes the filling grainy.
- If you need it faster, 6 hours is the minimum. Two hours is still a pudding, not a slice.
Easy substitutions
- Chocolate sandwich cookies
- Graham crackers, and add 1 tbsp cocoa to the crumbs
- Heavy cream
- An extra 8 oz whipped topping, folded in the same way
- Bittersweet chocolate
- Semisweet chocolate
Storage and reheating
Storage
Refrigerate covered up to 4 days. It does not freeze cleanly.
Reheating
Serve cold. Do not warm it.

Kitchen tools we love
Practical tools these recipes actually use. This is not a review roundup, and these are not paid placements. If affiliate links are added later, they will be labeled and disclosed.
A heavy 12-inch skillet
Most of the chicken and steak recipes are written for one pan that holds heat. Stainless or cast iron both work.
An air fryer with a real basket
The air-fryer recipes expect a single layer. A crowded basket steams instead of browning.
A half-sheet pan
Drumsticks, potatoes, sausage, and carrots all use one. A dark pan browns faster than a very shiny one.
A sharp chef’s knife
These recipes do not need a specialty blade. A sharp 8-inch knife is faster and safer than a dull one.
A large cutting board
Big enough that the onion and the raw chicken are not sharing the same puddle.
Dry cups and a liquid cup
Desserts in particular expect level dry measures and a separate cup for milk.
An instant-read thermometer
Use it for poultry, pork chops, and meatloaf. Color is a weak guide.
